Zusammenfassung
Fettsäuren werden im menschlichen Organismus nur in begrenztem Umfang synthetisiert, die mehrfach ungesättigten ω-3- und ω-6-Fettsäuren müssen mit der Nahrung aufgenommen werden. Aus Arachidonsäure (AA) entstehen im Stoffwechsel Eicosanoide mit proinflammatorischer Wirkung, aus Eicosapentaensäure (EPA) wenig- bis antiinflammatorische wirkende Eicosanoide. Der AA / EPA-Quotient ist ein Biomarker der Entzündungsbereitschaft. Eine erhöhte Zufuhr von EPA bei gleichzeitiger Einschränkung von AA führt zu antiinflammatorischen Effekten, die sich z. B. bei Morbus Crohn und rheumatoider Arthritis positiv auswirken.
