Abstract
Beside the isomeric carveols and the diastereomeric dihydrocarveols, identified here by chromatography and spectroscopy, in caraway oil also appear hydroxilic compounds caused by exterior influences. They are mainly perillic alcohol and carvacrol. The formation of carvacrol is explained as acid catalyse in which carvon first takes the form of an enol.
Zusammenfassung
Neben den isomeren Carveolen und den diastereomeren Dihydrocarveolen, die hier durch Chromatographie und Spektroskopie nachgewiesen werden, erscheinen im Oleum carvi auch durch äußere Einflüsse entstandene Hydroxylverbindungen, zu denen hauptsächlich Perillaalkohol und Carvacrol zählen. Die Carvacrolbildung wird als säurekatalytische Umwandlung des Carvons über ein Enol betrachtet.
