Summary

The exact amino acid constitution and the lysine availability of four Egyptian leguminous seeds, namely, Ervum lens, Cicer arietinum, Vicia faba and Lupinus termis were estimated. The four seeds proved to be good sources for a high quality protein.

Zusammenfassung

Die Samen von vier ägyptischen Leguminosen, Ervum lens, Cicer arietinum, Vicia faba und Lupinus termis wurden auf ihren Gehalt an Gesamt–Protein, Aminosäuren und verfügbarem Lysin untersucht. Alle vier Samen erwiesen sich dabei als hochwertige Protein–Lieferanten.
