HPLC-MS analysis of resveratrol in different nutritions
Background:
The topic and importance of antioxidants are intensified nowadays; they are in the central interest. In the modern world there are too many effects that attack our human organism and damage it. These are: smog, smoking, stress, cancers. During their effects with free radicals are formed, they are caused illness. The people in the modern world need the information about the healthy nutrition and lifestyle to keep themselves healthy for a long time. There is type of antioxidant in the poliphenol's family, the resveratrol that can mind the free radicals, so helps keeping healthiness. This poliphenol can be found in lot of food-products. The main aim of this thesis is to prove that our chosen food- products contain resveratrol and to put them into the nutrition. The science of nutrition says that we should consume antioxidants in natural way, so we cannot overdose them. Methods: In this research we examined wines from Villány, green tea and oil-seeds with HPLC and Mass Spectrometer. Results: During the analysis we could show, that wines and oil-seeds contains enough resveratrol, outstanding amount was in Merlot (3.9mg/l), Pinot Noir (3.2mg/l), Kékfrankos (2.8mg/l), Cabernet Sauvignon (2.8mg/l), Zweigelt (2.7mg/l), sunflower-seeds and almond. In green tea we couldn't prove enough resveratrol, but they contain another important antioxidants: chatechins, so we examined these substance. Our results were satisfying. Conclusion: The research proves that we should fit in these products into our nutrition with the knowledge of the right amount. Red wines with their alcohol content, oil-seeds with their fat content can be harmful and can cause various diseases. If I have to name a type of diet, that contains these products in healthy doze, it would be the Mediterranean diet. This diet shows a type of nutrition and lifestyle, which helps us to keep the organism healthy.
