Abstract
The effects of phenolcarboxylic acids, caffeic acid, p-coumaric acid, and ferulic acid on the generation of superoxide anion and the production of lipid peroxide induced by superoxide anion were studied. Only ferulic acid anion among the phenolcarboxylic acids scavenged superoxide. Caffeic acid and ferulic acid inhibited lipid peroxidation induced by superoxide anion. These effects were comparable to those of superoxide dismutase or DL-α-tocopherol.
Key words
Superoxide anion - lipid peroxide production - phenolcarboxylic acids - caffeic acid - p-coumaric acid - ferulic acid - active oxygen species
