„Essen hält Leib und Seele zusammen“, lautet ein gängiges Sprichwort. Denn Essen bedeutet viel mehr, als den Körper mit notwendigen Nährstoffen zu versorgen: Was und wie Menschen essen, ist ein zentraler Bestandteil ihrer Kultur und Identität [Tab. 1]. Verliert die Nahrungsaufnahme ihre integrative Funktion, kommt es zu einem Auseinanderfallen von Leib und Seele.
