Der Fall Humana - Eine retrospektive Betrachtung unter besonderer Berücksichtigung des HACCP-Gedankens

Zusammenfassung

Es werden einige Aspekte zum so genannten »Humana-Fall« aufgegriffen und erläutert. Aufgrund einer Unterdosierung von Vitamin B₁ in einem koscheren Milchersatzpulver-Erzeugnis kam es in 2003 in Israel zur Erkrankung von 23 Kleinkindern, von denen drei starben. Vor diesem Hintergrund wird der Begriff »koscher« ebenso wie die ernährungsphysiologische Bedeutung des Vitamins B₁ dargelegt. Auf Basis des HACCP-Konzeptes (Hazard Analysis and Critital Control Points) werden die Produktionsschritte zur Herstellung koscherer Sojaspezialmilch hinsichtlich des Vitamin-B₁-Gehaltes vorgestellt.

Zusammenfassung

The article elucidates on some aspects of the so called »Humana case«. In 2003, an underdose of vitamin B₁ in kosher milk powder products caused the death of three infants and injury to an additional 20 in Israel. Against this background, the notion »kosher« as well as the nutritional importance of vitamin B₁ are explained. The article also presents a clear production process of kosher soymilk with regard to vitamin B₁ content, based on the HACCP-concept (hazard analysis and critical control points).
